cook noodles, drain, pour cold water on them for a while (stops them sticking)

chop garlic and ginger, slice mushrooms, chop cabbage and fry all ingredients in olive oil til cabbage is wilted but not over cooked.

mix with noodles and add soy sauce + sesame oil.

if you want this dish hot you can fry the noodles with the ingredients instead of cooling under cold water.
