Ingredients
* about 2 "handfuls" penne pasta
* 2 or 3 cloves garlic
* 1/2 of a medium-sized onion
* 1 or 2 tbsp. pine nuts
* 1/4 tsp. dried basil
* 1/4 tsp. dried oregano
* 1/4 tsp. dried parsley
* 1/8 tsp. chili powder (optional)
* 1/8 tsp. sage
* 1 tbsp. butter (margarine does not work or taste as well)
* 2 tsp. parmasan, asiago, romano, or a combination of any or all cheeses
olive oil
* 2 or 3 cloves garlic
* 1/2 of a medium-sized onion
* 1 or 2 tbsp. pine nuts
* 1/4 tsp. dried basil
* 1/4 tsp. dried oregano
* 1/4 tsp. dried parsley
* 1/8 tsp. chili powder (optional)
* 1/8 tsp. sage
* 1 tbsp. butter (margarine does not work or taste as well)
* 2 tsp. parmasan, asiago, romano, or a combination of any or all cheeses
olive oil
Instructions
begin by putting water on to boil for the pasta, and simultaneously putting in enough olive oil to cover the bottom of a small frying pan.
set heat under the frying pan on medium to medium-low.
chop onion and garlic and sautée them with pinenuts until onions are tender and pinenuts are browning, then remove from heat.
when pasta is nearly done, put heat under the frying pan on low, and mix in the basil, oregano, parsley, sage, chili powder, cheese, and butter to the pinenuts/onion/garlic. Continue to heat over low heat until the pasta is cooked.
drain pasta and put in a bowl, and spoon mixture over the top. Just before dish is served, sprinkle a pinch of cheese and love on the top.
It is much easier to handle the dish when it is in a bowl, and the pinenut/herb/etc. mixture should be more of a topping than a sauce.
The chili powder is optional, and I just throw it in to add a little more flavor.
Don't be afraid to eat all of the topping mixture, even if you finish off the pasta
